Rose, Lemon and Raspberry Collins Punch

Makes 1.5L
Ingredients
250ml ClemenGold Gin™️
150ml raspberry and rose syrup
150ml lemon juice
900ml Soda water
2 lemons, sliced for garnish
½ cup raspberries for garnish
Rose petals for garnishMethod
Fill a big jug with ice. Add the ClemenGold Gin™️ and lemon juice and top up with the soda water. Add fresh lemon slices and raspberries into the punch jug. Pour 25ml of the raspberry and rose syrup into a high ball glass. Top with ice and then pour over the punch. Garnish with rose petals and fresh raspberries.
How to make the syrup: Place 1 cup of fresh raspberries in a small pot with ½ cup castor sugar and 50ml rose syrup and simmer until the sugar melts and the berries break down a little. Remove from the heat and strain the mixture. Allow the syrup to cool before using. -

Ingredients
50ml ClemenGold GinTM
35ml Port-style wine
25ml orange juice
15ml lemon juice
10ml ClemenGold® spiced sugar syrup (add cinnamon and nutmeg to the syrup recipe preceding this recipe)
1 egg white or 15ml of cellulose**Cellulose is a plant-based product that provides that foamy topping
Method
Add gin, Port-style wine, orange juice, lemon juice, sugar syrup and egg white (or cellulose) to a shaker
Fill with ice and shake vigorously
Strain liquid into your second shaker tin. Remove ice and dry shake the remaining liquid
Pour into a chilled glass and dust lightly with cinnamon powder
Sip and enjoy!
